DescriptionThe Tamaki Co-operative Dairy Company's cheese-making room.
The room contained 8 vats in which cheese was made. The first vat in the picture has 2 of the items used in cheesemaking: a mechanical curd stirrer and bucket. Next to the vat is a row of cheese hoops. Once the curd is drained and broken up it is put into the cheese hoops, pressed and set aside to mature. Pasteurising equipment can be seen at the far end of the room.
